Great British Game Week - Comforting, Care-free Casseroles

It’s Sunday and even when the sun is shining it’s wintery outside. Now I know this is the traditional day to sit down to a roast, and very delicious they are too, but to my mind there’s nothing quite as comforting as sitting down to a giant pot of slow cooked casserole for a late Sunday lunch – pop it in the oven in the morning and head outdoors with the family. This leisurely method of cooking is particularly well suited to older, tougher game – the meat becomes meltingly tender and the medley of flavours in the casserole are intensified: delicious!

Scrabbling around the deep freeze for inspiration, I found two slightly forlorn looking whole pheasants. I needed something that could be thrown together quickly in the morning, hungry from a morning of shouting from the bright, but chilly, side lines. This is a deliciously creamy and sweet way to cook pheasants, just perfect for an autumn Sunday!
