Slow-Cooked Goose & Wild Duck Pie

As the season draws to a close, now is the perfect time to enjoy the last of the rich, full-flavoured geese and wild ducks before the birds are gone. This slow-cooked pie transforms these game birds into a warming, rustic dish, perfect for marking the end of the season with a truly special meal.

The deep flavours of the goose and wild duck meld beautifully when slow cooked with aromatic onions, garlic, thyme and a splash of port. Slow cooking ensures the meat becomes tender and succulent, while puff pastry gives you a beautifully golden lid that seals in all that flavour.

Whether you’ve just returned from a crisp walk in the hills or are simply seeking a game-rich comfort dish, this slow-cooked pie is a timeless favourite. Let the rich aroma fill your kitchen and enjoy every savoury bite.

Ingredients (serves 4–6)

  • 2 goose breasts, diced

  • 2 wild duck breasts, diced

  • 2 red onions, finely sliced

  • 2 garlic cloves, crushed

  • A generous slug of port (or red wine)

  • 1 tbsp plain flour

  • A sprinkling of dried thyme

  • 1 vegetable stock cube

  • Salt & freshly ground pepper

  • Water (to cover)

  • Puff pastry to cover

Method

1. Prepare the Game:

Gently sweat the onions and garlic in a large oven dish with a touch of oil until soft. Add the diced goose and duck and sprinkle over the plain flour and thyme.

2. Add Liquids & Seasoning:

Pour in a generous slug of port and crumble in the stock cube. Season with salt and pepper, then add enough water to just cover the meat. Stir gently to combine.

3. Slow-Cook to Tender:

Place the dish in a moderate oven (around 190°C if not fan-assisted) and cook slowly for about 1½–2 hours, stirring occasionally, until the game is meltingly tender.

4. Finish Under Pastry:

Once the meat is tender, lay your puff pastry over the top of the pie filling and return to the oven for about 20 minutes, or until the pastry is puffed and golden brown. This gives you time to prepare creamy mashed potato and seasonal veg to serve alongside.

  • Add extras: Sautéed button mushrooms stirred into the filling before topping with pastry give an earthy bonus.
  • Serving: Pair with buttery mashed potato, roasted root vegetables or seasonal greens for a truly comforting meal.
